This recipe is probably my easiest. For so little effort, the reward is simply delicious.
1 package of Halved Pecans
1 cup of white sugar
1/4 cup dark brown sugar
1/4 cup of ground cinnamon
1 tablespoon nutmeg
1 tablespoon cloves
Any other spice you’d like to add
Add the sugar mixture to a zip-lock bag. Put the pecans in a colander and rinse them with water (the sugar mixture will adhere better on wet pecans). Put the damp pecans in the plastic bag with sugar mixture. Shake well so all the pecans are coated. Sift the pecans out of the mixture using a slotted spatula (or spoon). (Reserve sugar mixture for your next batch of candied pecans.) Spread the pecans on a cookie sheet. Make sure the pecans do not touch. Put them in a pre-heated oven at 350 degrees. Bake for 20 minutes or until you smell the pecans. The purpose of baking is to caramelize and set the sugar to the pecans. Be careful not to overcook the pecans.
Let cool. Use a spatula to scrape the pecans from the cookie sheet. There are a 101 uses for candied pecans. I sprinkle them in salads, and snack on them while I watch TV.
