Poached Pear Banana Nut Bread

This recipe is not only easy but impressive! Makes a beautiful presentation.
Pairing pear and banana flavors was a well kept secret I am happy to tell!

 

Ingredients:

Standard ingredients for Banana Bread
(I used Betty Crocker Banana Nut Muffin & Quick Bread Mix)

3 Bosc Pears (It is a firmer pear and will stand up better when baked. Choose pears with stems, for presentation)

Preparation:

Poach the pears for no longer than 5 minutes in boiling water. (I selected my pears very carefully, mindful of the fact that their tops, including stems, will be visible after baking.)

When the pears pierce easily, remove from water and let cool. Use the poaching water for the portion of the banana nut recipe that calls for water.

Lightly spray a nonstick loaf pan with Pam (or its equivalent). Pour banana nut batter into pan. Gently arrange pears into batter.

Place pan in a 350 degree preheated oven and bake for approximate 30 minutes. Test doneness by touching the top of the loaf. If firm, remove from oven.

Allow loaf to cool. Slice and serve.
